It is an expensive cut but so delicious. I also served with a horseradish sauce. I ended up raising the oven temperature to 300 F and cooked to medium to suit my family's taste. Use a meat thermometer and let rest for 20 minutes-perfect!

I also used jarred horseradish, but it was still very tasty with Ina's slow roasted beef tenderloin. I received many compliments! It's so nice to have such a great resource like Food Network.

It is really easy to beat a stick of room temperature butter, box of sifted powdered sugar and a few tablespoons of milk and use it in place of the canned frosting.
