Reviewed twice-baked sweet potatoes

When I make twice baked potatoes I always bake one extra that way they are really filled. For some reason once you scoop out the potato and mash there isn't quite enough filling. That extra potato gives each potato just enough extra to make them special.

I saute shallots in the bacon fat before adding the vinegar, mustard etc. It really does add a lot to the dressing

This is a classic recipe. My only addition is ground Cardamom. This gives the chicken that kicked up taste that will have them coming back for Thirds !

You can also eliminate the baking powder and salt by using Self Rising Flour. It makes a very crispy crust and is perfect to make Biscuits to go along with the chicken. "

I cook bacon or sausage ...or both and set it aside. then do the potatoes as above. I then crumble the sausage/ bacon, crack the eggs and add the cheese and finish in the oven. My family doesn't like the salsa with eggs but does like chopped tomato so I sprinkle that on and bake. "
