"Excellent! The carrots & tomatoes I used had a hint of sweetness which added great flavor to the soup. I added 4 small diced Yukon gold potatoes & sweet frozen corn. I did not have thyme or spinach so I used fresh flat leaf parsley & the soup was delicious. My husband had 2 bowls & did not miss having meat. :) Thanks Ellie for a tasty & healt""

"Wow! A lot of work but worth the end result. Very rich and creamy. Next time, I will use a cooked rotisserie chicken to cut down on the time & add more peas. I also will try lump crab meat instead of chicken. My favorite part is the crunchy topping. Tip: measure out & chop everything before beginning. DIVINE!"
