ohh forgot also add a can of cream of celery soup and make sure your oysters are fresh! Celery salt to taste is good also :)

I saut�ed a med size shallot and a big clove of garlic for about 3 minutes instead of the green onion. Also the half and half gives much more flavor then the milk. Increased the oyster amount a tad and added old bay or creole seasoning instead of the cayenne pepper. Garnished with some parsley to make it look pretty and delish!!!

I just made this for a special Christmas Eve dinner for 3. Everyone agreed that it was the most tender piece of meat they had ever experienced. Watch out as the temp of the roast will keep going up some after you take it out. Mine was med rare to med so if you want it truly med rare maybe closer to 22 min. Still awesome and the mush ragout was...
