"My family loved this new, unique dish! Couldn't find the artichokes either - so used a rutebaga instead. Had a firmer consistency than the squash, but made a decent substitution. Loved the uniqueness of the mild sweet flavor. The mashed potatoes/parsnips were a huge hit as well!""
