I made this desert for friends 20+ years. Everyone loved it!
It was light and creamy just as Giada said it would be.
However, you must DRAIN the pineapple, or your end result
WILL be icy.

Looking forward to trying this recipe. However, the recipe does not mention the 2 (whole) eggs slightly beaten before adding the sweetened condensed milk. ? Also, It mentions baking time for the crust and the meringue (?). Or is the meringue timing also baking time for the pie as well since it does contain 2 raw eggs? I'm confused."

Loved these cookies! So "Lemonie". However I did cut back a little on the butter, salt and sugar. They were wonderful. Chose to not use a sandwhich type cookie but layer cream cheese sauce on the top (or not at all) also make them smaller in circumference. What a great "Tea" or anytime cookie this made. Thanks Claire.

Try Freezing your pineapple juice in ice cube trays. Therefore, you will not need as much ice. Great blend of flavors and so refreshing.
