I've been making something like this for a few years now. Add anything you want and roll them up in tortillas. I want to point out that Columbian talks about a NY University, among other things. But the name of the South American country doesn't have a U in it. It's Colombian.

This was delicious as written, except I did use Sriracha sauce instead of the hot flakes, and I didn't use the "very good" egg. I did double the recipe without doubling the oil. It worked fine. Next time I plan to add a meat and/or shrimp. This becomes one of my regular recipes. "
