I made this tonight as a side to tacos. I thought it was great! Very flavorful and refreshing. Next time, i would use vidalia onions, not red onions. It was a little too spicy for my kids to eat because of the onions! I had always wanted to make a rice pilaf, but thought it was hard. This was extremely easy and quick!""
