Wow, I LOVE this soup! Made it twice in less than a week. I have made minestrone in the past and always had issues with the pasta soaking up the juice. This is nice because it cuts back on carbs so yay! I followed the recipe and found it to be so flavorful. Surprisingly the rosemary was not overpowering as I had anticipated and the beef broth...
