"Yes it does take longer than 20min to cook a chicken. If you want to quicken up the cooking, cut out the spine and split the breast bone sightly and roast it butterflied out. You will be cutting it up anyway at the end and this will allow you to more efficiently season both sides. Doing it this way will keep your cooking time under 1hr easy."
