"I just finished making and tasting this cake :0 My husband asked me to make one, I've never even had a Pineapple Up..Down cake before, so I was a bit nervous. I usually don't use Emeril's recipes they can be to difficult to make and most of the time have to many ingredients. But I liked the rating and decided to make it today. I was a little worried about the negative reviews like "too buttery taste", "runny batter", "Don't over mix the ingredients", etc. But the cake turned out GREAT !!! It is absolutely delicious and fluffy and light and taste nothing like pancake :0 I'm so happy I found this recipe! I'll definitely will be making it a lot now :0 My hubby loved it too!
Oh, I forgot to write - I think there is a mistake on the amount of butter it says "In the bowl of an electric mixer, cream together the remaining 1/2 cup butter and the granulated sugar until light and fluffy." But in fact the remaining amount of butter is 1 cup. It is a typo I guess. :0)
