This is a great recipe! I didn't have buttermilk so I used milk with a touch of lemon instead. I was more generous with the lemon and less so with milk, so my gravy turned more of a piccata-esque sauce. I used part olive oil, part butter as my fat, which rounded out the flavors very nicely.
