I will never buy ricotta again - my husband used this in lasagna and it was the lightest most delicious lasagna we have ever had - I drain it much longer than 20 minutes to have a thicker texture - more like 1 - 3 hours depending on how it looks - I leave it plain in the frig and add scallions, herbs and spice for a great spread in crackers or crostini,...

Easy, fun and the entire family loved it - we just added chive, salt and pepper, served it on warm bread with some of us adding an olive tapenade on top - Like other reviewers, we don't plan on buying ricotta again, this is a new staple!

This was excellent - used spinach instead of Arugula and husband insisted on quickly blanching the spinach before stuffing - and we served it with Giada's Roasted Vegetables - cause hey, the grill was already fired up so we decided to try the succotash another night. We LOVED it!"

My only reason for 4 instead of 5 star was that the puff pastry squares were a little to big for finger food, definetely a three bite treat which made it a little awkward - BUT, people loved it. BONUS, we used the chutney with the leftover lamb after Easter and it was fabulous - took the lamb from left over to fabulous. Also put the goat cheese "
