Reviewed Italian Marinated Chicken with Red Potatoes

I used twice the marinate and the chicken was very good. I cut the potatoes and carrots in small pieces but they did not get soft after cooking for 45minutes at 400 degrees. I live at 6,000 ft. so that may have had something to do with it. I will make this again but I will put the potatoes and carrots in the microwave for a few minutes before pu"
