Reviewed French Onion Soup

"Spectacular!!! I added Shallots and a large garlic clove 7 onions in total. I had homemade chicken stock, 2.5 cups with 4.5 cups of organic beef stock. Used top quality liquor and a decent wine. Let the onions really carmalize...buy a cast-iorn soup/dutch oven-you'll have it forever...the onions come out lovely this way(not such a tendency to burn""

Reviewed Chicken Noodle Soup

" DO NOT skip the chicken stock step! make your own! Its so sliky ans smooth....never buy the box! take it from me I am a retired restaurant owner. you can then use those stock veggies to puree for baby food or even my pup likes them as a treat! I added a parsnip to the stock and only had one white onion and used a spanish yellow/brown onion...it was marvelous! Also chopped up jalepenos and had chilie paste on the side.. Outstanding! PS check out Barefoot Contesa's recipe...for chicken soup...the way she makes her stock is even better if you have the time...she basically boils the chicken with all the veggies listed adds dill, lets the chicken simmer for an hour then removes the breast meat...then lets the stock simmer for another 2 hours or so...for a super rich broth! YUM!"

I used all the chicken meat (no skin though The first time I made it I used bok choy also! yummy! and I only had fettuccini noodles...worked great though...also chopped up jalepenos and had chilie paste on the side...husband had a chest cold and loved it! the next time i used those no yoke wide but short noodles (my favorite for chicken soups!!! Outstanding! PS if you want more broth buy a few more legs and thighs to throw in the pot (they are cheaper unless you want more breast meat,but the flavor is in the dark meat and the bones Happy cooking.
