Reviewed grilled salmon with smashed cucumber-date salad

Dec 2, 2014 on FoodNetwork.com

Been meaning to make this for a while. It was the perfect change after Thanksgiving. Made exactly as directed. The salmon and salad were good, but just a little bland for our taste. EXTREMELY pleased with the presentation of the fish. I'm going to play with the recipe to see if I can add a little more flavor with herbs.

Made this for dinner last night. Followed the recipe except used cornflake crumbs and pistachios. Sooooooo delicious! Will make this again. Can't wait to try this with other types of fish. I can switch out the nuts depending on the fish, ex. Trout fillets with almonds, salmon with pecans, etc. Yummy! Who needs to fry fish?

Made this for dinner last night. It was absolutely outstanding. Did not use a whole fish, but used small sized pieces to make individual servings. Did not alter the recipe in any way. My family loved it and we had NO leftovers. Plan to make this again on Sunday for company. Thank you Ina, once again, for an outstanding recipe.

When I made this for Christmas, I too, used parmesan and parmesan reggiano. (Not a big fan of cheddar.) It was absolutely delicious. Have stuck with it, too.

This is my second time using the recipe. Made it exact except I didn't have fennel pollen the first time. Fennel pollen arrived about 2 weeks ago so I made them again for Sunday dinner. Saw the show, looked up the recipe and read the reviews. I was so disappointed. It tasted like a savory pancake. If I were to make it again, I would cut the baking mix to 1/4 cup and only use one egg. I love zucchini and I want to taste it. "
