I'M GLAD YOU MENTIONED THE WHITE WINE, I'M ABOUT TO TRY MAKING SPAGHETTI CARBONARA FOR THE FIRST TIME, AND DON'T HAVE BRANDY ON HAND. I USED TWO RUMP ROASTS THAT EQUALED FIVE & A HALF POUNDS, AND COOKED FOR 5 HOURS. I COULDN'T HELP MYSELF, I HAD TO ADD GARLIC AND BAY LEAVES. I JUST CAN'T IMAGINE ROAST WITHOUT THEM. WE LOVED IT.
