I loved this stew! it was relatively easy to make, and it tasted amazing!. The green beans came out perfect, and I have a feeling the leftovers will be fantastic! You obviously aren't inserting the thermometer in the correct part of the meat. The thermometer has to be in the thickest part of the breast and cannot touch the bone, or you'll get a false reading. If your turkey is in fact 161 degrees, it should never be pink.

Great. A whole lot better than any store-bought dip, and a whole lot lower in salt. A lot of the store-bought dips are way too salty. This is especially good with a thick-cut kettle-style chip.
