Reviewed Quick Fake-Out "Stuffed" Eggplant

Made this tonight and really enjoyed it! I used larger eggplants because that's all I could find at the supermarket, so half and eggplant per person was perfect! So delicious with fresh basil and parsley from the farmer's market. Whipped up some 5 minute cous cous as a side dish and a simple tomato/basil salad. Will definitely make this again...

SO delicious, especially when using the freshest farm grown tomatoes, basil, and parsley. I used a whole medley of olives and skipped the anchovies (since I was making it for my parents, who aren't fans!), and it still had the perfect amount of saltiness.
