"Love it. To make it a one-dish meal, I added 2 cups of cooked chicken (poached in stock and cubed at 1/2 inch) and deleted the mushrooms. I also used half-and-half instead of cream -- the casserole was still rich and creamy. It needed more liquid because of the chicken addition, so I added a half cup each extra half-and-half and stock.

"I will make this again and again -- so delicious. I served the dish up with fresh lime wedges for extra zest. I used about a half tablespoon of ginger. "Delicious and very quick to make. Easy, healthy weeknight dinner. Will definitely make it again.
