Not sure what sort of ovens they use in the UK, but 400 degrees Fahrenheit for 4 hours is WAY TOO MUCH. The rub and infused oil create a delicious crust, but turn your oven down and take a bit more time - I recommend 400 for the first 20 minutes and then 7 hours at 275 (marinating overnight helps too). "
