These 'ARE' craizy good. These cookies are moist and crumbly at the same time. Perfect for breakfast or with tea....mmmm..... I only made a couple of changes to the recipe, substituted 1stick of butter with 1/2c of veg oil. And used 1c all purpose flour and 1c whole wheat flour instead of 2c all purpose flour. I have made a 100 of these cupcakes by now. this is my base recipe for a cupcake. the moistness is from the buttermilk. the recipe as such is a SUPER-HT. I tried these coconut cup cakes simply because I was only left with some grated coconut and pecans in my pantry and I really wanted to bake something. I exactly halved the ingredients and still ended up with 12 cup cakes on a regular mufin tray and a small bundt. They were rich moist and the top edge was crunchy.. hmm yummy...
