After years of brining, I finally did a side by side test of one brined and one in a cooking bag. I was shocked that the bag won. No more wasted ingredients and tons of juice in the bag for the best gravy ever.
Sorry Alton and other brining fans, Chef Symon and Flay are right. Brining is a waste :)
