A great subsitute if you are craving pasta. I hate when recipes are changed but I reduced the calories by using 2 tbls of butter and 2 of flour and using chicken broth with less cheese to make the sauce.. Also if you want it crispy I would try roasting at higher temp for less time, Loved the pancetta but bacon would work. My husband loved i"

Love this recipe! Be sure not to get pancetta and oil too hot or you will have scrambled eggs. Don't take out eggs early....I learned my lesson the third time making this recipe. Room temperature eggs and hot oil didn't work!"
