I only made the kale chips, so I can't speak to the potato element. The Neelys had a recipe that was almost identical, except it included a sprinkling of brown sugar. I made one batch of this recipe and another batch of Giada's (a similar recipe was on her show last Saturday). I have to say that the brown sugar made the difference, all other ingredients being equal. Don't skip the brown sugar. The chips are really bitter tasting without it.
