This was fantastic. I made a few modifications- Roasted the veggies in the oven for half hour with herbs and added mushrooms to the garlic whilst cooking. I also subbed goat cheese crumbles for blue cheese. The red pepper flakes kicked up the heat factor, mint added freshness and the flavors came together beautifully."
