This is a great recipe! I get so many compliments on my pumpkin loaf/muffins every time I make it. It is incredibly moist and flavorful, and is so easy to make. A few changes I make:

1. I use organic pumpkin puree instead of freshly grated pumpkin - time saver
2. White whole wheat flour works perfectly in place of AP flour,...

This is the simplest & most delicious loaf ever! My boyfriend requests it at least once a week :) It is especially good with some chocolate chips! To satisfy my "health nut" side, I use whole wheat flour, 2/3 cup applesauce in place of the eggs, and omega-3 butter. In my opinion, you can cut the sugar to 3/4 and won't notice a bit.
