This will be the first Thanksgiving that I'm responsible for the turkey. After seeing all the five-star reviews, I decided to do a "dry run" and make a turkey this weekend. I followed the recipe exactly except for brining 18 hours instead of 16. The bird was INCREDIBLE! The meat was moist and tender and soooo flavorful. I will have zero trepidation...
