Reviewed Minestrone Soup
"Fantastic! I split the recipe in half and still ended up with about 4 servings. This is a wonderfully thick, hearty soup that sticks to your ribs. I simmered the soup longer than the recipe calls for before adding the beans and pasta. It made the veggies much more tender, otherwise they would've been crunchy. I will definitely be making this soup often!
