This was an EXCELLENT recipe! I used the ingredients as listed, but added a pound of roughly chopped shrimp to the mixture. I just cooked the shrimp when I "toasted" the garlic in the oil and it turned out great! The mint refreshed the dish without overpowering the flavors.
