Reviewed excellent meatballs

First time I've ever made meatballs. I used the meats called for (got the ground veal marked down). The meat was squishy and the balls didn't hold their shape. Wonder if chilling them prior to cooking or the partial freeze to set them would have helped. The meat wasn't soupy when I formed it but they were flattening out while waiting to be browned...

i wish that errors in the recipe would be reviewed and corrected promptly. i had a number of observations on another cooking show/not food network where omissions that i'd mentioned were immediately fixed.
this recipe looks good and is an interesting take on the classic caponata. plan to try it. i really enjoy alex's cooking approach...
