I made this recipe exactly as written and it was really tasty. It is not a combination I would have made on my own and I'm glad I tried it. The texture and flavors were great. Nice soup. I did not make the "dippers". I thought the dash of hot sauce over top was a nice touch to this basic recipe. Next time I will cook the cauliflower, onion and celery just a little longer and work on the texture. I felt that the soup had too many teeny bits. Would have liked it either REALLY smooth or more chunky. I think it was somewhere...

The dressing is tasty and the recipe is easy and quick. I used pre-washed baby spinach because that's what I had on hand. I'm going to try it with bok choy next.
