Reviewed Spinach and Ricotta Gnocchi with Quick Tomato Sauce
"I love this recipe. I make half of the recipe as do other posters. It's so easy to make your own ricotta, and it's fast and no need for the overnight draining. 1/2 gallon milk, heat on med high to a full boil. Turn off heat. Add 3 Tbsp fresh lemon juice. Stir slowly in one direction until the curds start to form and seperate from the whey (a minute or two. Pour into a collander lined with a double layer of cheese cloth and let it drain for about 20 mins. Refrigerate. Ready to go!
