This technique is perfect - sauce is perfect and beautiful. Yes, I believe the 1-1/2tsp salt that the directions say to use is way too salty for my taste - but THAT is an EASY adjustment - just don't use it, adjusting the salt, pepper, and lemon to taste is a no brainer...I LOVE this recipe.
