Reviewed Butterflied, Dry Brined Roasted Turkey with Roasted Root Vegetable Panzanella

I wanted to try this recipe out on myself before I cooked it for a family gathering. I let my turkey age for 4 days uncovered in the fridge as directed. It took longer to cook & it was still very moist. So moist I was concerned it wasn't cooked all the way. I think I am so used to eating dry cooked turkey throughout the years maybe I don't know ...
