These were very good and so easy to make, definitely a keeper. I also omitted the cilantro (just not my favorite) and changed out the red pepper flakes for 2 tsps of cumin and 2 tsps of paprika. My only complaint is that they were not as firm as I would have liked but they still held together pretty good. Next time I will try refrigerating the mixture...

Followed the recipe as written and they came out moist and delicious. As a previous comment I filled my muffin tins 3/4 full and was just the right amount for the muffins. I ended up with 15 medium sized muffins. I did add a little chopped nuts on top before baking as a decorative touch and added crunch."

delicious! Only made a few changes, used 4 tbsp unsalted butter, 1 large onion, and reduced salt to 1 tsp (kosher)since I had reduced the number of onions. Other than that followed recipe as written. Per another reviewers comments I used 2% milk. It turned out great, I thought the amount of onion to zucchini worked great. "

Really Good. Based on some comments stating that recipe had a strong balsamic flavor, I used a quality balsamic vinegar combined w/ a white balsamic to get a milder balsamic flavor.
