I love this recipe. Good recipe to make ahead when you have company over. I made salmon to go with it. I didn't have currants so I used raisins and I used sour cream and goat cheese. Use what you have. Excellent recipe. :)

Reviewed Grilled Tuna with Grilled Ratatouille Couscous and Deconstructed Pesto

I used this recipe as a side dish without the grilled tuna. It was SOO good! I couldn't find whole grain couscous so I used a blend of brown and long rain rice with pearl couscous. Worked perfectly. I didn't use all the oil it called for and forgot the cup of basil at the end!?! Ugh..oh well. I will be making this again! I made it last night for friends...
