Reviewed Black Bean Soup with Mojo

"I'm not the best cook in the world, but I tried this and really didn't like it. I thought I would but it lacked flavor even with the mojo. I lived in Miami for a time and was exposed to some really good black bean soups, so maybe my expectations were a little too high.

Reviewed Winter Minestrone

"Saw this one on TV and it looked amazing so I decided to try it. Had to go to a Fresh Market store to get pancetta and swiss chard. I didn't have a parmesan rind so I just threw in a bunch of grated parmesan cheese, probably more than I should've. I'm sure the rind adds a better flavor, but this worked good enough for me! I made it a second time without the pancetta and used kale instead of swiss chard and also a lower quality parmesan cheese. I have to admit, the first batch was better! I also wouldn't mind adding more beans next time. I have also experimented by adding some noodles, but the soup becomes a little too thick!

Reviewed Mexican Chicken Soup

"I love this recipe and so does everyone who tries it. I first saw it on TV and decided it looked too good (and easy) not to try. I sometimes add green pepper, black beans, or even corn. I also experimented with wheat flour tortillas instead of corn. They melted into almost nothing but still didn't ruin the soup or anything - I would say corn tortillas definitely work better though! And yes, as stated previously, the soup gets even better the next day!
