I want to give it three stars, but I'll give 4 because I didn't cook it to a "t" even though I'm pretty good at making things up on the fly (I forgot to buy extra stock and only had 2/3 of what the recipe called for, so I added a bit of water and spiced it up with oregano, basil, garlic, etc.), and also because it was way better as leftovers. Just OK unfortunately... I liked it mostly for the fact that it felt a lot lighter/healthier than anything out of a container or jar. But at the same time I wanted it to be creamier and fattier. I have never had zucchini bread before, but this was great! Love the cinnamon and nutmeg flavor. Couldn't taste the zucchini very much, so if you're looking for that, you should probably add more zucchini. And the AMAZING crunchiness on the outside that everyone is raving about, it goes away after a day. So eat it/bake it the day of! Or live without...
