Reviewed Parsnip Muffins

I've made these several times and they are awesome. I grow parsnips every year just to put in these muffins. I don't usually have yogurt on hand so I sub sour cream. I don't use the almonds due to nut allergies and I add 1/2 a cup of currents with the parsnips. Yummy!

I love that you can use almost any fruit for this. That way I can use local, in season fruit. My favorite is to sub 1/2 tsp. almond extract for the lemon zest and use rainier cherries. It takes some time to halve all those cherries, about 30, but it it so worth it. Thank you for another keeper! "
