Reviewed Crostini with Sun-Dried Tomato Jam
"SO GOOD! The tomato jam came out fabulous. I added a bit of milk to the goat cheese to make it a bit more spreadable, and put the jam on top with a sprinkle of fresh thyme. Big hit.
Reviewed Macaroni and Cheese
"Oh my. This was rediculous. I made it for a small dinner party last night and my guests could not say enough about it. Creamy, cheesy and delicious. The cheese and cream/milk mixture seems a bit loose in the beginning - but don't fret, that's how it's supposed to be. I subbed hot capicola for the ham, and rendered it down so it got crispy. However, I forgot about it until right before i put the dish in the oven - so i sprinkled it over the top along with the remainder of the other cheeses. Crispy and delightful! U also forgot the parsley but didn't miss it. I served it with an arugula and brussel sprout-leaf salad with craisins and toasted walnuts, with a honey dijon vinaigrette. Holy yummy!
Reviewed Roasted Tomato Basil Soup
"So delicious. I don't even know where the depth of flavor came from! I didn't have a food mill or even food processor, so I mashed it with a potato masher. It's even good cold. Could have been used for a pasta sauce or pizza. With the leftovers, I managed to get my hands on a blender and pureed it with a couple fresh tomatoes and a touch of chicken stock. Heated it up and dipped a grilled cheese/panini, which i made with a garlic mayo, fresh mozz and genoa salami. I also served it once with a panini made with garlic and basil mayo, aged white cheddar and fig jam. So good! I hope someone else uses these ideas because I think you'll like it.
