SO GOOD! The tomato jam came out fabulous. I added a bit of milk to the goat cheese to make it a bit more spreadable, and put the jam on top with a sprinkle of fresh thyme. Big hit.

Oh my. This was rediculous. I made it for a small dinner party last night and my guests could not say enough about it. Creamy, cheesy and delicious. So delicious. I don't even know where the depth of flavor came from! I didn't have a food mill or even food processor, so I mashed it with a potato masher. It's even good cold. Could have been used for a pasta sauce or pizza. With the leftovers, I managed to get my hands on a blender and pureed it with a couple fresh tomatoes and a touch of chicken...
