"This soup is fantastic. I have made it a few times and everyone I make it for wants the recipe. I wouldn't change a thing, except it is helpful to know that you can also use butternut squash instead of the acorn squash. Don't skip the step of roasting the squash, shallots and garlic; the flavor would definitely not be the same if you just boiled""
