Reviewed Bob's Peppermint Pie

"This pie is deliiiiiiicious!! I bought a pack of Publix brand soft mints which was 9 oz and the mints weren't wrapped, so it saved a lot of time. I just dumped the whole bag into the heavy cream to melt. They are fairly small too, so I didn't need to break them up. A few didn't melt completely, but that wasn't a problem. I added a little red food coloring and 1/4 tsp peppermint extract to the melted candy/cream. I let it cool WAY down (actually in the fridge) but periodically stirred it to keep it from setting up, so it wouldn't melt my whipped cream. I also added 1/4-1/2 tsp of peppermint extract to the whipped cream. I folded it all together with a handful (maybe half a cup at most) of white chocolate chips. The red food coloring made it look soooo pretty and swirly like a giant peppermint! I dusted the top with crushed soft mints and cocoa powder. It was delicious and didn't have a jelloey texture. Creamy, fluffy, minty, and yummy!
