My Activity

Reviewed Garlic-Roasted Eggplant

"This was so easy and delicious. I mixed the seasonings for the essence and only used about 2 tbsp of it and saved the rest in a baggie. I only used 1 tbsp of cayenne so I would be able to eat it. My husband said it was really good. Made the house smell delicious too. I used bottled lemon juice instead of fresh. Great recipe!""

Reviewed Broiled Banana Splits

"This was so easy, quick, and versatile. I've made this a few times now with requests for the recipe. The great part is I just use what I have on hand. This can be super healthy to naughty ;)"

Reviewed Ultimate Ginger Cookie

"Absolutely delicious! We couldn't stop eating them! The best part is that they appeal to both children and adults. Another plus is that I had leftover crystalized ginger and this was the perect way to use it. These will be great for the holidays or any day.

Reviewed Almond and Lemon Biscotti Dipped in White Chocolate

"This was delicious! I gave them away to friends to have with their morning coffee so I didn't eat them all myself. I could've baked them longer the second time and they would've been crunchier. My fault though."

Reviewed Thai Shrimp Stir-fry with Tomatoes and Basil - Slimmed

"Everyone loved it. I tasted it before adding the mint and basil and it was okay. Adding the fresh herbs is what does it. Delicious!"

Reviewed Thai Basil Ice Cream with Beaumes de Venise Fruit Compote

"I give it 4 stars only because Thai Basil was had to find. I wasn't able to. I did however use regular basil and sprinkled in some anise seed to try to get closer to the Thai basil flavor. I LOVED the friut compote. I am not a big fan of mango but it was absolutely delicious and I ended up loving the wine I bought to make this. I did let it sit ov"

Reviewed Banana Brioche Bread Pudding

"I have been gobbling this up for days now (healthy I know). I added some butterscotch schnapps to the liquids. I was so rushed I forgot the bananas but added them sliced on top with some maple syrup and vanilla ice cream. I always judge my cooking by "Would I order this again if I was at a restaurant?" YES!!! "

Reviewed Coleslaw with Cumin-Lime Vinaigrette

"Absolutely loved it. Added honey like some others did for the sweet aspect. I also added twice as much cumin since I love the flavor. I only used 1/4 of an onion since we are not huge fans of raw onion. I will ba making this one again!"

About Me

I like to take my family to the local farmers market and we try to eat as organic as possible. My pet peeve is someone calling a sandwich a samwich. Food Network inspires me to cook!

Favorite Foods

I'd have to say my Italian dishes are pretty popular with my half-Italian husband and what kids don't love pasta? I love to cook anything if my kids aren't hanging on me. I find it very relaxing and love it when I cook something delicious for my hubby. I really don't have one favorite restaurant. It depends on my mood and energy level when you ask.
