I love Alton, I have many of his books and have learned to bake only because of reading his techniques in his books but this recipe is terrible, sorry Alton
I can't even believe Alto created this it's so bad
Really the best recipe for a good old fashioned Pumpkin pie is on the back pf the Libby's Pumpkin can.

Bobby Flay is fun to watch and I'm sure a great cook, but he goes so overboard on this stuff, where in the world does the average person get real vanilla beans, Please for one thing they are very expensive and you almost have to order them on the internet,
The recipe on the Libby's can of pumpkin is still the best, sorry Bobby

This is a terrible recipe, go look at some of the others on the Food network site, or I hate to say it, the best recipe is on the can of libby's pumpkin
Also the pie crust is bad too, just a tip, use quarter lard and 3/4 Butter, and freeze them before cutting into the flour.
This must be a mistake, Tyler Florence is a much better...

Substitute about a quarter of the Butter for real Lard, why do you think grand ma's pie crust was so good, just don't tell any one, they will Love the crust, also, Freeze the Butter and the lard for an hour or so before you blend them in the flour. Trust me.

For the people who would like a better pie crust, use 3/4 butter and 1/4 Lard, okay so lard sounds nasty just don't tell any one, why do you think your grandmothers pie crust was so good. The lard is what does it, also before you make blend in the Butter and lard FREEZE them for at least an hour. Trust me, best pie crust you ever made.
