I loved this dressing! I got lazy and didnt add the anchovies. Also just hand wisked everything together instead of getting the blender out. I only used 4 cloves of garlic and it was veery garlicky, but thats the way I like my ceasar. ""

My husband couldnt believe there was no cream or oil in this,its sooo good. I thought it was creamier served warm but it was just as good and still bright green the next day cold. Im always on the lookout for good do-ahead picnic food and this ones a winner! Oh,and my store didnt have arugula so I used a sping salad mix."

I used instant coffee instead of espresso powder because thats what I had on hand. Also, I used the tubed cookie dough from the store and smashed down the cookies before I baked them to make them thin.
