This has become one of my most requested dishes to bring to get-togethers. I double the recipe and make a huge 3 layer cake. Do not use the vegetable oil to coat the pans as he suggests. I have tried this several times on this and other cakes, and it has never worked. The cakes stuck to the pans. I'll stick with butter to prep the pans.

Soooo good. It was a big hit with everyone who got some in my holiday candy sampler. The syrup is AMAZING!! I used the walnut, almond, pistachio combo. The pistachios made a great difference.

I love ginger, and I love coconut. However, I do not love spending an entire day working on a recipe to have it FAIL. The end result tasted good but ended up as tiny pieces because the syrup would not keep it together. It would be nice to have water measurements.
