Reviewed Southern Red Velvet Cake

"This has become one of my most requested dishes to bring to get-togethers. I double the recipe and make a huge 3 layer cake. Do not use the vegetable oil to coat the pans as he suggests. I have tried this several times on this and other cakes, and it has never worked. The cakes stuck to the pans. I'll stick with butter to prep the pans.

Reviewed Toasted Coconut Marshmallows

"Ha! I had the same question when it came to adding the gelatin. When I opened the box and saw four envelopes, I thought, "Uh oh." I actually ended up using 4 envelopes because I had a hard time getting the batter to thicken up. I was sceptical that they would turn out, but they turned out great. People were very impressed that I had "made" marshmallows.

Reviewed Fleur de Sel Caramels

"I had to try this twice before I had success with it, but boy, what a success! The first batch came out like brittle - cooked too long and too fast. I cooked the second batch slower and constantly checked to see if it was done by dipping small amounts on a spoon in ice water. I also used plain kosher salt - I couldn't justify spending $12.00 on a box of salt.

"Soooo good. It was a big hit with everyone who got some in my holiday candy sampler. The syrup is AMAZING!! I used the walnut, almond, pistachio combo. The pistachios made a great difference.

Reviewed Jamaican Coconut Candy

"I love ginger, and I love coconut. However, I do not love spending an entire day working on a recipe to have it FAIL. The end result tasted good but ended up as tiny pieces because the syrup would not keep it together. It would be nice to have water measurements.
