hey Driedmilk! You need to let your cream cheese sit out on the counter OPENED for at least an hour. it needs to be room temp, or you will have lumps. I made a pumpkin cheesecake, and i let the cream cheese sit out. it was smooth as can be, then i added COLD eggs, and it was lumpy again. could NOT get the lumps out. So key is NOT to have cold...
