It does get gelatinous but once heated, it is just fine. I make it all the time. I use the whole chickens and shred the meat for recipes during the week like quesadillas or chicken salad

I have to give this five stars for the fantastic flavor. Outragous. I think I may have done something wrong though in making the sauce. It broke a little so I may have brought it to a boil when I shouldn't have, also the 1/4 cup of EVOO and 1/2 stick of butter made it a bit oily. I would cut done on the butter and oil a bit next time. So yumm"
