Reviewed Chicken Enchiladas with Roasted Tomatillo Chile Salsa

These enchiladas are truly fantastic. I have made them several times and they are ALWAYS a huge hit! I make double the amount of salsa because....well, that is where the flavor is! So, what salsa I have left over, I save for the next day....put it in a sauce pan, add some chicken stock, extra chicken that I also saved, and make a terrific Chic"
